1. The Rate of Rise (RoR): Anatomy of a Perfect Curve

Roasting specialty coffee is an intricate balance of thermodynamics and organic chemistry. Green coffee contains complex carbohydrates, amino acids, and delicate floral lipids that begin transforming the instant they hit the heated cast-iron drum.

  • Break & Skim (Minute 4): Piercing the aromatic crust with a silver cupping spoon to evaluate bloom aromatics.
  • Cooling Evaluation (Minutes 8 to 20): Tasting across 4 temperature stages as acidity, body, and sweetness stabilize.
